Our go-to vegan stock. The vegetables are first hard-roasted to develop flavor and color through natural caramelization. The stock is then slowly simmered for 3 hours to extract maximum flavor from the ingredients.

How it can be used: The two things we love most about this marina is its simplicity and versatility. This sauce is equally at home when paired with pasta, used on pizza, or in a braise or slow- simmer dish.

Italian Vinaigrette

Guesthouse Pancakes

Light and Fluffy

Ingredients: all-purpose flour, baking powder, salt, sugar

For every 2 cups of dry mix, add the following: 

  • 1 egg
  • 1 ¼ cups whole milk (or almond/nut milk)
  • 3 tablespoons melted butter
  • ½ teaspoon vanilla extract (optional)
  • 1 heaping tablespoon whole fat greek yogurt

Method: 

  • Whisk ingredients until just combined.  In a large bowl, whisk together the flour, baking powder, sugar, and salt.(Don't overmix the batter! A few lumps are okay and will actually help create a lighter pancake.)
  • Heat griddle or pan: Heat a lightly greased griddle or frying pan over medium heat.
  • Pour batter: Pour 1/4 cup of batter for each pancake onto the griddle.
  • Cook until bubbles form: Cook for 2-3 minutes, or until bubbles form on the surface of the pancakes.
  • Flip and cook: Flip the pancakes and cook for an additional 1-2 minutes or until golden brown on the other side.
  • Serve immediately. To keep pancakes warm while you cook the rest, preheat a plate in the oven at 200°F. 

Chef's tip: For even fluffier pancakes, separate the egg white and yolk. Beat the egg white until stiff peaks form, then gently fold it into the batter.

Beef Demi-Glace

Rich and Luxe

We think beef demi-glace is the ultimate sauce for steak. To use, gently heat ½ cup of demi in a saucepan. Once warm, add a teaspoon of green peppercorns and a few tablespoons of heavy cream. Allow to simmer for 3 minutes, then spoon over your favorite cut of beef and enjoy.

Demi-glace is also excellent for easily creating mouth-watering pan sauces. Simply deglaze your pan with a few tablespoons of demi, and once the fond has lifted, add in a few tablespoons of salted butter and slowly swirl the pan until the sauce comes together.
